Why it tastes like this
Dried fenugreek leaves, left whole so they keep their aroma until you want it. Crushed between the palms straight over the pan, they give the deep, faintly bitter note that makes a dal or a paneer gravy taste finished instead of flat.

One pinch into shimmering fat, count to two, then the rest of the dish. This blend is ground fine enough that more is genuinely worse.
